Huub has been alot of this going on lately. My Cossie had exactly the same problem and I know of at least 2 others, mine was down to the temp sender as was the others. Not saying that's defo your problem but it's a cheap place to start £3-5 from Any independent parts shop. Would be surprised if it isn't the cause.
Doesn't sound like a thermstat problem to me.
Guy.

Sounds like a temp sensor or possibly a jammed open or missing thermostat

My needle would wonder about between its true reading and cold, it turned out to be some oxidisation on the pins of the multi-plug - the one through which all of the engine sensors pass, which is on the inner wing off side of the engine bay. The plug is held into the socket with a 10mm (I think) bolt. Just unplug it and plug it back in, it may cure the problem.

You can check before touching that by shorting the sender unit plug to ground, where upon the gauge should read hot.
