Changed thermostat and temp switch but gauge still occassionaly drops down a little before returning back to the normal 9 o'clock position (can't hear fans coming on) - from cold it also sometimes takes a little longer to get to the normal postion than I would expect - air coming out is very hot even when it does this so am suspecting there maybe another problem - any ideas?

Yes. Air in the system. Sounds like it needs to be bled again. Have a read of this thread which is in How to do Things.
