No reason why you can't replace it with a used one so long as it is the same size.
Pistons usually have a size marked on them - something like 'STD' , '+10' , '+20' and so on.

On the side of the head it say's Z19 with H2 underneath it and number 1 in the middle of the head if anyone has one going spare. Cheers Lee

When you say 'Piston head' do you mean the round thing in the cylinder bore which moves up and down ?

have a look at the latter rs2000 escort and early galaxy  
 
they used the 2.0 lump
 
i think the 2.3 has the same piston but on a longer rod

the 2.3 hase bouth biger pistons and longer stroke.if you whonted to go to a 2.3 thers a complet good re-con motor hear.fare cheper in the long run.ther is also a 2.0 with a head gasket gone but thts been on its side fore more than 5 years
