These cold mornings the delay from popping the selector  into   DRIVE  and the car  moving  off  is  just  over  1 sec. ,   anything  to  worry about  or  should  I  stop   being  so  anal ?

I would check the level of the transmission fluid. Sounds like it could be a teeny bit low.

Also make sure its a decent colour.

1-3 secs is quite acceptable and with the oil being thick and cold it takes a litle longer to fill all the oil ways in the gear box.

What is it like when its hot?

When   hot  it's  much better,  about  half a second  to  engagement,    I'll check the fluid  level as  I tend to forget it when  checking  under  the  bonnet.

that sounds very acceptable , remember to check the level with gearbox at working temp and after selecting all the gears a couple of times put it  "P" and leave the engine running. Level should be checked then.. If you need to add fluid its down the dipstick hole!
