To drain the system, I find the easiest way is to unscrew & remove the pressure switch, as it's pretty much the lowest point in the system & lets most of the fluid pour out ....be sure to turn the steering a couple of times to force as much fluid out as possible (on stands, with engine off....obviously  http://smilies.blazemint.com/s/cwm/3dlil/smirk.gif) ....
P/S pressure switch is no 7 on this page  http://www.fordscorpio.co.uk/manual/steering/PASDescript.pdf )

You'll never get it all out though...there is always a bit left in the rack that will come out when you drop it...so have some newspaper at the ready  http://smilearchive.com/s/contrib/ed/2.gif

The rack removal procedure is here.... http://www.fordscorpio.co.uk/manual/steering/PASRack.pdf   http://undergroundfreakz.com/s/cwm/cwm/smirk.gif

Once the new rack is fitted, fill the reservoir up to the top & switch on engine for an instance & then shut down immediately (the fluid gets sucked down very quickly by the pump)....Top the fluid up to the max mark & start engine again...

...With engine running, bleed any air from the system by turning the steering close to full lock, left to right, 2 or 3 times (full lock may damage the pump)....then top up to max again if needed.

After this, any air bubbles left in the system should eventually be expelled under normal driving, so check the level after a few miles  http://smilearchive.com/s/contrib/lynx/yelsmile.gif

Keep the weight off the front of the car when doing the lock to lock bit or you'll strain the seals. As JC says make sure you only turn on for a second as that fluid will drop in an instant.
