When MIG welding the car to just put a wee patch in the rear wheel-arch, what should I disconnect?    Just the battery and Alternator??

I would disconnect them both and make sure there isn't a fuel leak lol.

put the earth clamp as close to where you are welding as possible,

take the boot side carpets off and keep a water source near, there is sealant in the arches that burns well, and you will only see / access the flames from inside the boot (from personal experience   ::))
