anyone know if its possible to convert the electric drivers seat,
to a manual, also putting a winding wheel, to adjust back rest
seat position,

Yes you just need to get hold of a manual seat. Its easy to swap seats over. Most people go the other way Manual to electric!

want to convert electric seat into manual, does anyone know if it's possible to get the wheel to allow the backrest to fully recline

I would have thought the seat frame assembly for manual & electric adjustment are very different.
You should be able to get the backrest to fully recline with electric adjustment.

the motors are not working, this is an old one I had to replace,
I now want to use it in a non electric capacity, all the base and
sliders have been taken off and stripped down, just left with the
seat now, as any one got a diagram showing wiring to the seat,
and how the seat functions, I cannot remember,were the motor
for the backrest is,

the motor in the seat which operated the backrest,
and the lumbar control still work, so have wired them
in so have electrical operated recline now, may also
be able to get heated seats, now ive got power to the seat.
