Title: Engine Coolant Light keeps coming on

I keep getting the engine coolant light coming on whilst driving my Cosworth, but by the time find some where to stop and look the light's gone out >:(

What's more every time I check the coolant level it is on Max mark :-/

Is this likely to be a sensor fault and if so how much, and where can I find a replacement? Is the sensor located on the header tank?

The problem may well be a sticking float. The sensor is located underneath the expansion tank and pushes in and twists to lock but it fits inside a tubular recess and the float is actually inside the tank and rises and falls around the tubular recess and the sensor inside it!. Have you got any residue in the tank which could cause the float to stick? If it really annoys you, it may be worth changing the tank (I think they are still available and quite cheap from Fords)
